TUNA AND SQUACH PAY!!!

Enjoy this delicius and helathy tuna pay!!!

Ingrediente:

Base:
2 1/2 taza de galleta integrales molida
4 cucharadas de mantequilla a temperatura ambiente
Relleno:
2 cucharadas de aceite de oliva
2 calabazas medianas laminadas
un toque de sal y pimienta
2 dientes de ajo picados
4 latas de atun en agua drenadas
2 tazas de pure de tomate
Para terminar:
1 taza de queso manchego rallado
1/2 taza de cilantro labado ,desinfectado y picado
1 chile serrano limpio y picado
2 cucharadas de pan molido.



Preparacion:

     -Precalentar el horno a 180 C
     -Mezcla en un tazon las galletas molidas y la mantequilla hasta integrar.
     -Forra el contenedor con la mezcla (el contenedor puede ser de vidrio o de aluminio pero que sea para               horno) revazando las orillas del contenedor.
     -Hornea por 10 minutos.
     -Barniza con un poco de aceite las laminas de calabaza, espolvorea sal y pimienta y cocina en tu parrilla hasta que las lineas de la parrilla se marquen, Reserva.
     -Calienta un sarten, agrega el aceite de oliva que te sobro, dora ligeramente el ajo y sal junto con el atun , cuando tome calor agrega el pure , mezcla bien y deja que el liquido se evapore para que te quede una mezcla espesa.
      -Retira el refractario del horno y encima de la crujiente galleta haz una capa de calabazas parilladas , rellena con el atun y termina espolvoreando el queso, cilantro ,chile y pan molido.
      -Hornea hasta que se gratine y listo para servir.

popper jalapenos!!

 
!!Popper Jalapenos!!
 
 
 
Yield: 1 dozen
Ingredients:
 
1 Pound of jalapenos
1 cup Cheddar cheese
2 to 3 cup all purpose flour
2 to 3 cups of bread crumbs
2 Eggs
Canola or peanut oil for frying
 
 
 
 
 
Directions:
Preheat  the oven 350 degrees F. Put the jalapenos on a  baking sheet and get them in the oven for 35 min.When the jalapenos are warm put them in a plastic bag for about 5 to 10 minutes then take the skin of each jalapeno. Using a paring knife and make and incision the length of each jalapeno(don't cut the pepper in half).Remove the seeds then carefully, fill each pepper with cheese.In a bowl stir the eggs. Dip the stuffed pepper in the eggs then roll them in the flour and then roll them in the bread crumbs.
 
 
 
 
Fill a large frying pan with about 3 inches of oil
  and heat over medium-high until the thermometer register temperature 350F( The thermometer temperature can be tested by dripping  little water into the oil. if the oil is sizzles immediately, the oil is hot enough.
Working in batches, fry the pepper,turning them once or twice,until they are crispy or golden.Drain the pepper on paper towel. let them cool for about 10 minutes then served them on a bed shredded lettuce topped with sour cream.



Paella!!!

Meat lover  Paella!!!

 
To many thins to cook a delicious Paella but, this time we going to use a  classic meat and vegetable that we normally have at home every day.
 
 
 
 
Yield:  6 to 8 serving
 Ingredients:
 
 
1/4 olive oil
1 small onion diced
1 green bell pepper diced
1 pound Mexican Chorizo
1 cup frozen green peas
1 cup frozen whole corn
2 large carrots
8 oz turkey ham
8 oz hot dog
8 oz smoke bacon
2 cup or large rice
 
 
 
 
 
 
Directions:
In a large pan lower the heat to medium and saute the onions, green bell pepper and carrots until softened and reserve.In the same container cook the Mexican chorizo (sauce) and bacon until the bacon is complete cooked, add turkey ham and hot dog for about five min.Mix the vegetable with the meat and add green peas and corn . Normally I Cooke the rice in a rice cooker, when the rice is ready mix all ingredients with the rice and that's its.
