!!Popper Jalapenos!!
Yield: 1 dozen
Ingredients:
1 Pound of jalapenos
1 cup Cheddar cheese
2 to 3 cup all purpose flour
2 to 3 cups of bread crumbs
2 Eggs
Canola or peanut oil for frying
Directions:
Preheat the oven 350 degrees F. Put the jalapenos on a baking sheet and get them in the oven for 35 min.When the jalapenos are warm put them in a plastic bag for about 5 to 10 minutes then take the skin of each jalapeno. Using a paring knife and make and incision the length of each jalapeno(don't cut the pepper in half).Remove the seeds then carefully, fill each pepper with cheese.In a bowl stir the eggs. Dip the stuffed pepper in the eggs then roll them in the flour and then roll them in the bread crumbs.
Fill a large frying pan with about 3 inches of oil
and heat over medium-high until the thermometer register temperature 350F( The thermometer temperature can be tested by dripping little water into the oil. if the oil is sizzles immediately, the oil is hot enough.
Working in batches, fry the pepper,turning them once or twice,until they are crispy or golden.Drain the pepper on paper towel. let them cool for about 10 minutes then served them on a bed shredded lettuce topped with sour cream.
